La s\u00e9paration de l&rsquo;amande et de la pulpe se faisait \u00e0 la main, elle s&rsquo;est progressivement m\u00e9canis\u00e9e. Le s\u00e9chage n\u00e9cessite 8h de soleil ou beaucoup moins dans un four adapt\u00e9 \u00e0 55\u00c2\u00b0c. On commence par d\u00e9velopper les saveurs et senteurs, bonnes et mauvaises, que l&rsquo;on trouve dans le caf\u00e9.
